A Simple but unrelenting Western Chef’s knife
9 inch full tang 80CrV2 blade, 14 inches overall
2.3 inch heel, allowing plenty of knuckle clearance
Gorgeous stabilized redwood burl scales, with an asymmetrical geometry. Two flat surfaces on the left aid in edge indexing on the fingers while a gently radiused right scale fills the palm of a right handed user. The scales are lined with black G10, and fixed into place with stainless pins
All steel surfaces coming into contact with the hand are carefully rounded over to ensure no hotspots form during extended use
While fairly thick, the blade has a boat-tail grind, with a very tall convex primary bevel that very slightly thins towards the spine which aids in food release.
